Redemption! We had some enchiladas left over from the other night so I took the opportunity to play around with them to see if I could jazz up the blandness a bit and SUCCESS!!! Hearing Tommy's mmmming and yumming after each bite assured me of that. It was easy peasy...since I couldn't really go back and marinate the chicken in the taco seasoning I tossed some taco seasoning in some sour cream to plop on top of them once they were heated up. Before re-heating I poured some salsa over the top of them which kind of acted like tomato sauce does for stuffed shells, sprinkled on some fresh cheese and added some spring onions that we had left over from salads the other weekend. Once they were hot I plopped on the jazzed up sour cream and voila! They were YUMMY and Tommy even said he liked the taco seasoned sour cream. So we have a winner! I would have pictures but we ate them up too fast. Next time instead of using diced tomatoes and onions I think I will just use salsa and Tommy think that instead of taco seasoning in the chicken, he liked the jazzed up sour cream instead.
Now I am very excited to make these again-I think next time I will add some Spanish or Mexican rice as a side and possible some beans. Now we have an alternative to taco night!
What post of mine wouldn't be complete without mentioning little Lilly Grace! Today was a good day. Almost overnight I feel like she grew!! The other day I was looking at her 3 month clothes and wondered why they were so much larger than her newborn gear which she was slowly creeping out of. I ended up finding a few gowns in 0-3 month size for her to wear in between. Well today (2 days later) she's fitting into some of the 3 month sleepers!!! Holy Cow! The newborn sleeper I had on her today I noticed only fit if she scrunched herself up and she wasn't able to stretch out her legs-I am horrible for letting my child wear clothes that are too small. She has 1-2 outfits that she still can wear but this little chunker isn't going to be in them long. I am kinda sad...I feel bad for some of the sleepers that were only worn once or not worn at all they are so cute and this means my newborn isn't going to be a newborn for long! Luckily we only had about 4 newborn sleepers and 1 'outfit'. A word of advice to soon to be mom's-if your baby is 7 lbs and up don't go crazy buying newborn clothing-the gowns are perfect and babies can get a lot more use out of them! We've been 'investing'-if you can even call it that-3mo and 6mo sizes for spring and summer. I used to think baby clothes were so cheap but even at $6 if the baby wears it once-yikes your aren't really getting a deal there.
Lilly is one popular lady lately. Today the mail person dropped off a huge bag of goodies. We got her rabbit decal for her room, a new headband (both from Etsy), a groovy tie dye onesie from Tommy's band mate Chris (how nice! ), another hat from one of my students (SUPER cute!), and our order from Shutterfly (I got free prints and a free photobook). It was like Christmas. Normally I am a Snapfish girl but I got tons of coupons from Shutterfly from being on some sort of 'mommy' list so I gave them a try. PSA: Snapfish photos are sooo much better but I am not complaining since it was all free. So that was the highlight of our day besides the enchilada success. Here is a picture of Lilly modeling her new headband...She was having her tummy time and was enjoying sucking on her sleeve too much but you get the idea-she still looks too darn cute!
EW! Snapfish sucks! I used to use them, and then started using Shutterfly. I got free prints to Snapfish recently, so I used them, and EVERY pictures came out like crap! They tried to blame me, telling me I should've previewed them, but finally credited my account. I printed them from Shutterfly, and they were awesome. I have a credit for 30 snapfish prints, and I don't think I'll use them!
