Yummiest Salad Ever!

A BIG Thank you to my friend Katie who made this salad at our get together the other week.  Since then, I have been OBSESSED!  Seriously it's amazing and I've been eating it every other meal.  It's the perfect summer salad and perfect for someone trying to eat healthier!  I made it the night before going back to work so I at least had a yummy lunch to look forward to.  Since one bag of salad makes two pretty large meal size salads I also had it for dinner.  Did I mention how much I love it?!  I did alter the recipe slightly from her version.  Seriously you have to make this salad-NOW!  Yummy!!



What you need:
  • 1 bag (or more depending on how many you are serving) of Spring Mix salad-I like Fresh Mix-1 bag for me makes 2-3 salads
  • Dried cranberries
  • Feta cheese
  • Gala apple(s) cubed
  • Katie added-tomatoes cubed (I didn't use tomatoes because I am not a huge fan)
  • sliced salted almonds (this is what I added but I also think it would be good with walnuts or pecans as well. 
  • Ken's Light Raspberry Walnut salad dressing 
    How to make it:

    Just toss it all together.  There is no science to it-I mix in however much I like (I always load up on the feta-love love love feta!

    It's actually an easy salad to take for lunches because you can easily divide up the salad and as much toppings you need in Tupperware containers to mix together at work. 

    It's divine-trust me.  Thanks Katie for giving me such a kick arse salad recipe!  It was much needed and Oh So Good!
