How 'bout these muffins?

So I recently bought blueberries at BJ's Wholesale club (I always need to clarify after an incident where I updated my facebook status while in BJ's for the first time to:  "I love BJ's"-came home to a ton of comments!).  What in the world possessed me to buy blueberries in bulk and think we would eat them all is beyond me.  BUT after I got them home I had a brilliant idea-I am going to make muffins! So muffins I did make. 


My first thought was to grab the muffin recipe from my aunt.  These make a more cup-cakey muffin which apparently didn't tickle my husbands muffin fancy (hmmmm).  So to Pinterest I went to look for another more traditional muffin recipe and found one that was very good.  The muffins were crunchy on the outside and soft and more muffin like on the inside.  These were muffins-according to Tommy.  I made two batches of two different types of muffins and luckily muffins freeze well and we now have a nice quick breakfast in the am.  Lilly loves them too!  Here you have it, the tale of two muffins (muffin is a pretty funny word if you say it enough): 

Recipe #1-The family recipe-more cake-like muffins
*I found out later that you are supposed to roll the berries in flour...mine all rose to the top of my batter making the muffin tops full of them and the bottoms not so much. 

Stuff that goes in the muffins:
     
1/2 c. oil
2 c. flour
1 1/4 c sugar
2 eggs
1 1/2 cup of whole milk
2 tsp. baking powder
1 tsp. salt
2 c. blueberries (rolled in flour)


Let's make muffins:

Pre-heat oven to 350.
Mix oil, flour, and sugar together.
Add eggs, milk, baking powder and salt to the mixture
Stir until dry ingredients are moist
Stir in blueberries

Bake for 25-30 minutes in lined muffin pan


Recipe #2-The muffin mans muffin-do you know him?  Apparently Tommy does.

Stuff that goes in the muffins:

1 1/2 cups  flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup chocolate chips/1 cup blueberries

(this makes a small recipe)

Making the muffins!

Preheat oven to 375 degrees.
Grease 12 muffin cups or line with muffin liners.
Combine flour, sugar, salt and baking powder.  Stir in chocolate chips/blueberries.
Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fill muffin cups about 2/3 full.
Sprinkle with additional chocolate chips if desired (is using chocolate chips).  Bake for 14 to 16 minutes.

  1. When Bobby and I worked together at a newspaper before we were married, there was a local restaurant called Buffalo Jack's. We were talking with the news editor's wife about local places to eat, and Buffalo Jack's came up. She exclaimed loudly, "Oh, I love BJ's, and so does Matt!" And she was the type who totally didn't get it, which just cracked us up even more!
