Not So Average (Sloppy) Joes

After my last post I was inspired!  Tommy was working and I was home with time to bake and cook!  Yeah!  Ever since I saw this recipe for Peanut Butter Cheesecake Swirl Brownies I haven't stopped thinking about them.  I thought since I had some extra time I would give it a try.  Epic Fail!!!  I was so disappointed.  The brownie was dense and cake like...and not sweet and gooey at all!  What did I do wrong? It seems I had to have done something but the batter was oh so tasty I am not quite sure what happened.  I went back over the recipe and I didn't miss anything...so I am just tossing the recipe and maybe I will stick to box brownies...those are always a crowd pleaser.  You win some you lose some.
And now on to the win...
For dinner I planned Sloppy Joes.  They were, as always, awesome!  I don't really have a recipe for them...but here are the basics.

I start by browning 1lb of ground beef.  I used 87/13 beef...you gotta have some fat for flavor.  I do drain some of it and leave a bit for flavor/consistency. 

Once the beef is cooked and I drain some fat...the fun begins...making them sloppy!  What you will need:  Brown Sugar,  Catchup. Mustard (Yellow), and Worcestershire Sauce.  Not quite sure how much of each but I just keep adding some of this and some of that and keep tasting.  Basically you want some mustard, a few dashes (3-4) of Worcestershire, a good amount of catchup, and a few sprinkles of Brown Sugar.  I tend to like my sloppy sauce sweet so I add a bit more brown sugar always.  Just keep adding the ingredidents until you get your desired taste.  When you are done it should look like this:

Add meat to a roll and you have one yummy sandwich.  I like to use potato rolls but you could use whatever you like.  Tommy likes to add cheese to his...add the cheese first so when you put on the 'slop' it melts! 
I made some mac and cheese to go with it.  Yum!
 
In addition to making gross brownies and awesome Sloppy Joes, Tommy and I toured the Labor and Delivery unit at GBMC today.  When we started the tour, we all introduced ourselves and out of 8 couples we were the only ones who were going to be surprised!  I shouldn't be shocked since it seems like everyone finds out these days but I would have thought there would at least be one other couple who were waiting until the big day to know...nope-just us AND every single person was having a boy!  Maybe it's a sign that we will have a boy too...OR that we better lock up our daughter because there are going to be way too many boys out there for her...either way I think it's going to be so exciting to find out on delivery day! 

GBMC is an amazing hospital and I am so glad I made the decision to change doctors to be able to deliver there.  Hard wood floors, beautiful rooms, wonderful staff...everything was amazing.  We even got to see the nursery and the new babies!  They were so cute...and made me even more excited!  Today marked our 32nd week...only 8 more weeks to go.  We're getting there!
