Philly Cooking Cream: Enchiladas

I LOVE Enchiladas!!!  For some reason I never attempted to make them home made-every recipe I found just seems complicated and I can never seem to find all the ingredients.  It all changed when I found this (it was actually a recommendation from The Nest) :

The recipe looked so easy I just had to get it and try it.  I was pumped.

Eh...so I was underwhelmed.  Now don't get me wrong they were good..but bland.  They needed a little something something.  Now I did add more cheese than the recipe called for and sprinkled some on top and I think that helped...but they lacked that certain flavor.  I think if I make them again I would marinate the chicken in taco seasoning.  They just lacked that kick I was looking for in enchiladas.  We have some left overs and I plan to mix some taco seasoning in some sour cream to hopefully punch up the flavor a bit-so we will see.  I may make this again but I am still on the hunt for anther easy to make enchilada recipe.

On another note they have a few flavors of the cooking cream and it may be fun to try some more recipes using these.
