I have been obsessed with all things pumpkin lately-funny because I never was a HUGE fan before but now I love it! Still not a fan of pumpkin pie but coffee, bread, baby food-I am in. Pumpkin bread is super yummy. You know what else is super yummy? Chocolate! So I whipped up some pumpkin bread batter and tossed in some chocolate chips and I got a to die for Pumpkin Chocolate Chip Cake. Now, I can't take ALL the credit for this recipe. See my husband randomly talks about this cake he had once called Pumpkin Dot Cake. I Googled it and it pretty much is pumpkin bread with chocolate chips. Some of the recipes were a bit different than my pumpkin bread recipe so I decided to take a chance and just add the chocolate chips to my standard recipe. Holy cow was it yummy!!! So without further ado let me introduce you to my new favorite fall recipe:
Pumpkin Chocolate Chip Cake
What you will need:
1 1/2 c. oil
4 eggs
2 tsp. baking soda
2 c. pumpkin
2 c. sugar
2 c. flour
3 tsp. cinnamon
1 tsp. salt
2 tsp. baking powder
2 tsp. vanilla
1/2 c. (I tossed in a bit more) chocolate chips
Mix all ingredients together in a large bowl (except the chocolate chips).
Stir in chips.
Bake in 2 loaf pans or 1 tube/bundt pan greased and floured.
Bake for 1 1/2 hours at 300 degrees.
Let cool and sprinkle confectioners sugar on top to garnish.
So yummy!!! It's even better the next day-gotta love that!
