Sunday Food Day

During the week are meals are quick and simple.  We usually just eat grilled cheese, salads, or leftovers. With Tommy and I both working now the evenings are pretty routine.  Come home, eat, Lilly gets a bath from mommy or daddy while the other cleans up from dinner.  Relax/play a bit and then bottle and bedtime for the Lillster, then we try to watch a show or two before we hit the sack.  We are usually in bed by 9.  We are tired people! 

The weekends are spent running errands and getting stuff done and hopefully somewhere in there we have family time and relax.  This Sunday we got to relax and because we don't do too much of it these days we spent some time making yummy dinners and even had a pretty extravagant lunch/  In between was spent napping and lounging and playing with Lilly.  I even paid off Lilly to write her own 1st Birthday thank you notes.  It pretty much was your perfect Sunday.


For lunch, Tommy decided he wanted to do home made sushi-yum!  I was particularly excited because I didn't have to do any of the work (and sushi is A LOT of work) and enjoy some yummy sushi!  We had shrimp tempura, California roll, Baltimore roll, and mushroom and asparagus roll.  What I DID do was make up some home made spicy mayo.  While Lilly napped we sat back and enjoyed the sushi.  It was heavenly.  My husband is a pretty decent sushi chef!


While Tommy was making Sushi I was working on a dessert I Pinned and have been wanting to try:  Blueberry Cream Cheese Coffee Cake.  

 
VERDICT:  Good BUT....I am going to modify it next time.  The plain cream cheese cubes it called for were kind of weird in the final product and while it wasn't bad by any means I think it would be even better if I made my cheesecake filling stead and spread that in between layers of batter.  I think I would also modify the crumb topping to be more crumby which I believe calls for more butter.  I am thinking Carlo's Bakery Crumbs...these crumbs were weak compared to those!  Lilly certainly loved it!


For dinner I wanted to try a crock pot recipe.  Yea I know it's the weekend I should be saving those for during the week right?  Well no-I like to try them out on the weekend to see if they are good.  If not I have time to whip something else up.  There is nothing worse than trying a new crock pot recipe out during the week and not liking it!  I decided to try another recipe I pinned.  Slow Cooker Lime Chicken Tacos


VERDICT:  Good!!!  I think a lot of the lime cooked out and we ended up squeezing more lime in the meat just before serving.  I really enjoyed these a lot!  The picture above is my husbands taco.  You cannot even see the chicken since he piled so much other stuff in it.  The recipe says to serve them with lettuce sour cream and cheese and we even added fresh salsa and guac to our options.  Below is a better shot:


We had a wonderful Sunday!  Before I end this post I did want to share some pictures from Saturday.  Tommy's band Qi Lo played a private party and  Lilly and I were invited too .  Since Tommy doesn't have too many day shows we jumped at the chance.  Even though we only stayed for a few songs Lilly enjoyed herself and even got to jam with her dad!

It's a little people's version of her Pa's tractor!!!  We had such a great weekend.  Looking forward to this one coming up already (and it's only Monday).
