These chip-wiches are Legen-wait for it...DARY! Seriously they are like crack. They really aren't that hard to make at all but there are a few secrets that make them so darn good and a little messy.
You could use any chocolate chip recipe but my favorite is Pheobe's Grandmother's recipe- Nes-le toll house! Yup good old fashion Nestle Toll House. Please do not use the slice and bake-buy a bag of chocolate chips and follow the recipe on the back and please use BUTTER! Trust me they will be to die for!
The secret to getting these extra yummy is to slightly under-cook them. I baked them for 7 minutes and yes if they still look slightly gooey in the middle that's good-They still cook a bit when you take them out. Let them cool completely.
Soften (just a bit) your favorite ice cream. I like Vanilla Bean best. Plop some ice cream between two similar size cookies and gentle press down. I sprinkle mini chocolate chips around the edge but you can leave them plain or use chocolate or colored sprinkles too. Wrap each chip-wich in plastic wrap and put them in the freezer. I also put them in a freezer ziplock bag and lay them flat. Once they are fully frozen-they are ready to eat. The cookie is soft and chewy and oh so good. You won't be able to resist these babies!
